To celebrate the lunar new year in Chinese style, we'll make dishes that may include hand-crimped dumplings; tender chicken stir-fry using the "velveting" method; and a whole fish steamed with ginger, scallions, and sizzling soy dressing. The centerpiece of our feast will be a cook-at-the-table hot pot of simmering broth with many ingredients added in stages and served with various dipping sauces. We'll finish with a fascinating technique for cutting and serving fresh oranges—a Chinese symbol of prosperity in the new year!
